Hard boiled eggs the hard way.

I have come to understand that I do thing the hard way. Or at least it just seems that way. I was peeling hard boiled eggs yesterday and it was really hard and time consuming and irritating that it wasn't going better. So I thought of this post and maybe it's even more time consuming but it's something I thought I'd share. Maybe it will help you have better luck with hard boiled eggs. Or maybe you've never had trouble - you should tell me how you do it so I won't have trouble...
  1. Make sure they are cooked well because soft boiled eggs don't peel easily.
  2. Don't let them cool down too much because they are easier to peel if they burn the tips of your fingers slightly.
  3. Keep them wet. If they dry out then the shell seems to adhere to the egg and when you peel it you end up taking the top layer of white stuff with it.
  4. Use older eggs because the fresh ones are harder to peel. This may not be a problem if you buy them from a store that had the eggs shipped in from some distant chicken farm. But here, you get them pretty fresh. (Not quite as fresh as we had in Alaska when we were getting them from the coop in our backyard.)
  5. Stop making things that call for hard boiled eggs and then you don't have to worry about it at all.

So if these are helpful hints then I'm glad they helped. If you already knew these things then why didn't you share them with me? Anyway, I just thought I'd write about it so that maybe I'll remember next time: cook them long enough, peel them sooner, keep them wet and really be patient because even after all these things they still may not peel very easily.
